With the discovery and colonization of America in the 15th and 16th centuries, the port of Seville becomes the strategic enclave for trade with the Indies, an activity that transformed the world. Ships returned from the new world loaded with unknown new merchandises that caused a gastronomic revolution.
“Al Lado” restaurant proposes a trip for the senses inspired by the miscegenation so typical of the Hispanic culture on both sides of the Atlantic and by the flavors that crossed the ocean on a round trip, with chef Paco Pérez the vision and quality.
Born in Huelva in 1962 and raised in Llançà (Girona), Paco Pérez develops a cuisine that overflows creativity and rigor. Thanks to a trajectory of determination and excellence, Paco Pérez currently accumulates five Michelin stars among three of its restaurants: 2 Michelin stars at Miramar restaurant (Llançà), 2 Michelin stars at Enoteca restaurant (Hotel Arts in Barcelona) and 1 Michelin star at 5 restaurant(Hotel Das Stue in Berlin). In addition, he uns several more establishments in Barcelona, Manchester, Poland and Mexico.
